Ever have that feeling that the meal you're cooking is some how getting away from you... running out of control... going to overflow the pot it is in, and the next two pots up including your biggest one?

I had that feeling this evening. I'm lucky, it didn't happen -- but it has before. For me, it usually happens with something like dried beans -- I'll put them on to soak... and it won't look like NEARLY enough beans... so I'll do more, or add another type. Then the next day when I'm going to add them to the chili, there is WAY TOO MUCH bean. They grow. They grow a surprising amount.

I narrowly avoided the disaster this time... but the slow cooker is full to the brim. Only one more thing to add... once it has soaked a bit longer. The additional bit is an ancho chile. Never cooked with one before... we'll see how it turns out.

Vegetarian chili is one of the things I do extreamely well. I've never had an ancho chili either...good luck!

This particular chili isn't vegetarian, but I often make ones that are.

Poblano peppers (anchos before they are dried) are the secret ingredient in most of my chili recipes - flavourful like jalapenos, but without as much heat.
