Cranberry Loaf (for ragnhildr)
Nov. 9th, 2005 10:43 pmRecipe for the Cranberry loaf that my mom served at the cottage and several people made yummy noises about, and that ragnhildr asked for the recipe. Transcribed from my mom's handwriting by me.
Cranberry Loaf
1/2 C shortening (room temperature) or oil. (I use Canola oil)
2 C. granulated sugar (cut down)
2 eggs
1 bsp grated orange rind
1 C. orange juice
4 C. flour (dag - she said she used a mixture of whole wheat and white flower, about 50/50)
2 tsp salt
1 tbsp baking powder
1 tsp baking soda
1 14-oz can cranberry sauce (dag - probably whole berry)
1 C. chopped nuts (dag - I think she used walnuts)
In beater bowl, cream together the oil & sugar. Beat in the egs & orange rind. Stir in orange juice. Add flour, salt, baking powder, baking soda & beat until thoroughly combined. Carefully stir in cranberry sauce. Fold in nuts.
Pour into two greased standard loaf pans (laine with greased foil). Bake at 350 degrees for 50-55 minutes. Remove from oven. Cool on racks 30 minutes & then remove from pans & peel off foil.
